At.mosphere to showcase Michelin creativity

Acclaimed two-star Michelin chef, Philippe Etchebest will take over the kitchen at At.mosphere on 25-26 November 2013 showcasing a signature French culinary style.
Chef Philippe will work along with At.mosphere executive chef, Jitin Joshi, to present a duo of exclusive degustation menus. Menus have been designed to showcase inventive, modern, and fun style. The three-course lunch and five-course dinner menu options showcase classic French culinary roots.
Some of the highlights highlights on Chef Philippe’s degustation menus include Bouchot Mussel Jelly with Zucchini and Tomato; Pain d’épice Foie Gras marinated with Saint Emilion, Poached Pear and a Mousse; Langoustine wrapped in Steamed Spaghetti, Celery and Raspberry Vinegar with Shellfish Butter and Coulis; seared Challon Duck with Dates, Lemon Confit, Green and Yellow Mango and a sour Ginger Duck Jus; and a dessert selection featuring Jivara Chocolate Mousse with Passion Fruit and Coconut Sorbet; and a spicy Mandarin Orange Salad with Crème Brûlée.
