Evason opens Asia’s first organic culinary academy

The Evason Hua Hin resort in Thailand has opened a new culinary academy based on the principles of raw and organic food.
In partnership with Matthew Kenney Cuisine, the US-based lifestyle brand, the luxury resort will offer Asia’s first “plant-based culinary academy”, offering month-long courses as well as weekday and weekend workshops.
The new culinary academy is set among eight hectares of tropical gardens, with access to organically produced herbs, fruit and vegetables.
Its curriculum will be centred on the use of “whole, organic, unprocessed plant-based foods”, according to the resort, and programmes focus on the preparation of both raw and cooked vegetarian cuisine.
“All programmes are structured to provide students heightened new techniques, enabling them to execute and innovate raw and cooked plant-based cuisine at the highest level,” Evason Hua Hin said.
As part of an initial enrolment package, students will be provided with accommodation at the resort. Classes will be handled by the Matthew Kenney Culinary Academy, allowing students to gain hands-on experiences in a commercial kitchen environment.
“Every aspect of the culture, operation and facility are developed to foster the company’s mission to advance cutting-edge living cuisine,” the resort added.
The launch of the organic culinary academy is the latest initiative the resort has taken in the health and well-being sector. Evason Hua Hin also features a Six Senses Spa that offers yoga and detox programmes, and the resort has adopted a series of sustainable practices, including water use reduction, waste management, sustainable purchasing and carbon emission reductions.
