Pullman’s Park Lane Hong Kong to launch rooftop venue

The Park Lane Hong Kong, which now forms part of AccorHotels’ Pullman portfolio, will open a new rooftop bar and restaurant next month.
Named ‘Skye’, the new venue is being created as part of a HK$300 million (US$38.7m) makeover of the hotel, following its rebranding as a Pullman.
Seating 180 people and covering 740m², Skye will feature a restaurant with three private rooms and a large outside deck dominated by an illuminated bar. Diners will be offered views of Victoria Harbour and Victoria Park.
The venue will be overseen by head chef Lee Adams, who has previously worked in Michelin-starred restaurants under Gary Rhodes.
“The concept behind Skye is about bringing Hong Kong’s global nomads together at a relaxing design setting,” said Luc Bollen, the hotel’s GM. “The food and cocktail culture at Skye underpins the sharing culture of today’s millennials. Chef Adams and his team aim to curate Skye’s menu to present an interesting mix of flavours and textures, creating a dining experience stimulating all senses.”
Skye is one of three F&B outlets at The Park Lane Hong Kong, along with Ebb & Flow, the newly refurbished lobby lounge, and Playt, an all-day dining restaurant with open kitchens.
