Holland America’s new ship to grow own ingredients

Holland America Line is planning to use ingredients grown onboard its new ship, ms Koningsdam, in its restaurants.

The cruise company has partnered Koppert Cress to grow fresh “microgreens” in the vessel’s Culinary Arts Center, enabling passengers to experience farm-to-table dining even when sailing across the ocean.

Once sown, the seedlings will grow for up to two weeks before being snipped for use in the kitchen. The microgreens, which will have flavours including garlic, mustard and liquorice, will be on display in a glass-enclosed growing area in the Culinary Arts Center, which will also feature a show kitchen and its own restaurant.

“Rather than being used as a garnish, the Koppert Cress microgreens will be used as integral ingredients in the recipes,” said Michael Smith, Holland America’s senior vice president of guest experience & product development.

“Our guests will be able to watch them grow during the cruise and then savour them freshly harvested and at their highest flavour potential during their dinner at the Culinary Arts Center.”

The new 2,650-passenger ms Koningsdam is scheduled to be delivered in April 2016.
