Thai resort offers carbon-free cooking

A luxury resort in Thailand has launched a new concept designed to eliminate the carbon footprint of its kitchen operations.
The Aleenta Hua Hin-Pranburi Resort & Spa has launched its new ‘Carbon Free Cooking’ concept, which features produce sourced from the property’s organic farm and then prepared by the resort’s chefs using environmentally-friendly cooking methods.
“The essence of Aleenta Hua Hin’s The Cellar restaurant is this food. It uses purely organic food and utilises solar ovens, smoke houses and techniques based on molecular cooking to keep our carbon footprint to a minimum,” explained the resort’s resident manager and chef, James Noble.
“You can do things differently and succeed while also being environmentally friendly. Sustainability is at the core of who we are as a resort, and it’s great when you can combine that with an enhanced guest experience.”
Almost all the produce used at the resort is grown on its organic farm, and Aleenta also operates a community garden where locals can take what they like and pay via replanting. All items, including meats, are transferred to Aleenta’s kitchens by bicycle.
